What Is a Grease Trap / Grease Interceptor?

Grease traps are used to reduce the amount of fats, oils and greases (FOGs) that enter the main sewers. They intercept the drain run that flows between the sinks and the sewer system. Only waste water flows through them and only water from the kitchen. They are commonly made of stainless steel, plastic, cast iron and concrete and they can be fitted above ground in the kitchen or outside the building and even below ground.
